Is it possible to make the fields adjustable to the text content in the header, footer and report detail?

How can I paint the rows of the report detail of 2 different colors?

You can make the RecordBox, RecordArea other layout element contents expand vertically in the Report’s Detail section as per the dynamic data. You will need to set the Expandable property of the layout elements to true.
 
DynamicPDF ReportWriter does not supports expanding the fields as per the dynamic data which are placed on Header and Footer.
 
You can add rectangles at desired locations and fill them with required colors. Then place layout elements over the rectangles. If you want rectangles to alternate rows, you can add two rectangles at the same location then set the ShowAlternateRow property on one to even the odd on the other.

Is it possible to make fields visible dynamically using a check box.  If you check the check box, then a new field appears below it to fill out.  If you unchecked the field then the new field disappears.

Hello,

Our product does not support hiding or displaying form fields when clicking a check box in a PDF.

You can dynamically fill the acro form fields by accessing them using full name or index. Please refer to the documentation on form filling here.
